Varietal: Geisha 

Process: Fully Washed. Hand picked at peak ripeness. Cherries ferment in hopper for 24 hours. Cherries are then dry de-pulped and kept in fermenter tanks for 40 hours. From there the cherries are washed and spread on African sun bed driers for 10-15 days until the coffee is brought to a moisture level between 10.5%- 11.5%. 

Elevation: 1700 masl 

Why this coffee stood out to us: For our inaugural coffee release, we aimed to capture the essence of the early stages of our coffee journey, marking the inception of our passion for specialty coffee. In around 2016-2017, Cale and I were profoundly moved by a shared moment over a cup of a washed Geisha from Hulia, Colombia. This experience inspired us to embark on a mission to introduce and share extraordinary coffees like this with a broader audience. 

This coffee is a tribute to that transformative moment. While it was our initial encounter with Dionel’s washed Geisha, the moment it graced our cupping table, we knew it was the ideal choice for our debut release. This coffee offers a journey of flavor experiences, boasting a balance of cleanliness and complexity. Depending on factors such as rest time post-roast, brew method, and extraction goals, you can unravel a plethora of nuances and diverse flavors in each cup. We hold a deep admiration for this coffee due to its clean profile and its ability to shine across various brewing methods.

What to expect in the cup: On the cupping table, this coffee really surprised us compared to most washed Colombian Geishas we’ve encountered. A mix of heavy bodied black tea, juicy stone fruits, and lemon when hot combine with subtle florals like rose, jasmine and honeysuckle throughout the cup. As the coffee cools expect to pick up on other flavors throughout. When hot, this coffee reminds us of oolong tea and lemon peel, while also presenting lighter notes of peach and tangerine as well. When this coffee is warm expect for those notes to transition in the cup to more of a plum, while still maintaining the lemon peel and floral qualities. When this coffee is cool, more of the intense sweetness and juicy body of a candied plum comes to the forefront, while still maintaining those qualities of lemon peel and light stone fruits like apricot. When cold, this coffee reminds us of jasmine and intense candied orange sweetness. We think this coffee is singularly unique for its perfect balance between heavy tea like body and darker red fruits, while also not losing the lighter floral qualities and opening up some light stone fruit qualities as well. This coffee truly is special and we are honored to roast and serve it to you as our first release.
